Ingredients
- Instant Tapioca Balls (https://www.amazon.com/dp/B00PLTLG4O)
- 1 tablespoon Brown sugar
- 1 tablespoon Honey
- 16 oz Brewed tea, chilled
- Milk or creamer
Steps
- Brew your choice of tea according to instructions, let chill. Traditionally we use black tea but feel free to experiment with green or oolong tea. I like a robust tea flavor in my drinks, so I brew the tea a bit stronger than usual.
- Bring a medium pot of water to boil. Cook tapioca according to package directions. I use about 40 pieces per 16 oz drink.
- In a separate small pan, heat up equal parts brown sugar and honey over low heat. Add a splash of water if it’s too thick.
- When the tapioca balls have finished cooking, scoop them into the sugar/honey mixture and simmer for 3 minutes, stirring occasionally.
- Scoop tapioca balls into a tall glass. Add as much of the brown sugar syrup as you like.
- Add the chilled brewed tea, top with your choice of milk or creamer. I like a 3/4 tea and 1/4 milk ratio.
